After
several months of thinking about it and finally watching the documentary film
"Forks Over Knives", my wife and I are finally going to pull the trigger and move to a whole-food,
plant-based diet.
The No Meat Athlete had a great review of the movie that has helped me to justify the decision.
The diet will be based on whole or minimally processed plants, primarily
fruits, vegetables, whole grains, tubers, and legumes. It
excludes or minimizes animal-based foods such as meat (including poultry
and fish), dairy, and eggs, as well as refined foods like bleached
flour, refined sugar, and oil.
I'm going to miss the end of summer BBQs and ice cream while watching TV, but I'm looking forward to joining a new community and researching new resources and recipes.
I'm truly excited by the start of this journey and make no mistake, I'm afraid of jumping in too quickly and missing the foods that I love, but as long as I have a partner who shares my goals I think we'll do fine... and my dog will certainly benefit as we clean the freezer of the remaining summer hotdogs.
